need to know if I can remove the battery and still lower & raise the electric levelers while hooked to my truck?

I think the output from the truck will not be enough to run the jacks. Also some trucks do not have the charge wire at the plug hooked to power.
If there is power at the plug it is a small amount for trickle charge of the battery.

The hydraulic pump can pull over 60 amps, maybe more in cold weather (hence the problem with the 50 amp breakers). Your truck wiring cannot support this load and will just pop a fuse.

What trailer do you have? Are they just stabilizers or self leveling jacks? If just stabilizer jacks, yes they will work just being plugged into the truck.

From what I understand u need a battery hooked up in the trailer for Hess to work as they pull power from the battery. Your truck charges those batteries. I carry a booster battery that I can use in a pinch

I'll leave the technical responses to the others--I want to welcome you to the forum! It helps a lot if you'll specify the year and model of your GD trailer. If you are inclined, take a moment and introduce yourself in the Newcomer's sub-group.
Hope you get your issue figured out.
