Rob is correct. Conventional current flow was guessed at by Franklin, but is incorrect. But it really doesn't matter which way the electrons or holes are moving. All formulas for circuit design will work in either application. Here's a short diagram that explains the two variations:

Is electron flow the reason why I was told I should disconnect the negative side of the battery first?

Not sure if it is electron flow , but if you attempt to un-hook the positive first your metal wrench may contact the trailer frame causing a short and sparks will fly. This is why we un-hook the negative first to isolate the battery from the trailer frame.

Brian is correct. I have seen the result of a wrench jammed between the positive battery terminal and the frame, with the negative battery cable still connected. Luckily the cherry red wrench deformed and fell out before the battery blew up. If you jam the wrench between the negative battery terminal and the frame (even with the positive still connected) . . . no big deal.

Did you mean to say "with the negative battery cable still connected"?

    Update 04 JAN 2019
Today I finished the install of two 12-volt power meters in my 2016 ST369RL.
One monitors the output of the converter. The other monitors all 12-volt power consumed by the RV.
Here is a link to my Google Drive Folder that has PDF's, Documents, Schematics, and Photos of the install.
The 18-2 speaker wire works well to connect the shunts to the meters.
Both meters came to life and were working the first time I applied 12-volt power to them.
