From our experience with our Instant Pot and looking at the numbers, you can probably get away with at a bare minimum of a 1500 watt inverter, but will not allow you to run much more while using the Instant Pot. A 2000 watt inverter which is what we had on our previous rig would be the better choice. We do a lot of boondocking and never had an issue using our Instant Pot and would not be without it. Something to know about Instant Pot, it does have a high draw, but it only lasts a couple minutes or so while the unit builds pressure, then the draw drops off significantly and foods cook a lot quicker with it.

When we boondock and the temperature is above 80 degrees out we run the generator and the air in the evening so running an instant pot is not big deal. If it's not hot out we still run the generator in the evening to ensure we have a full change for the night so running the instant pot for 20 minutes isn't a big deal. The way we boondock the instant pot works great but if you planning to not run your A/C and use the battery and solar only then the instant post isn't a good choice.

That's good to know! Boondocking is our eventual goal and the Instantpot seems very versatile.

We use our Instant pot while boon docking all the time and don’t even run the generator. It only pulls about 140 amps through our inverter.

Just as a follow up took the Instant pot back and got a 12" electric skillet. Only the two of us use it (dog doesn't cook yet-he's just the food taster) and can cook all kinds of items in it.
